It makes complete sense that National Piña Colada Day, July 10, is smack dab in the middle of the summer- this sweet, tropical cocktail (or tropicocktail perhaps?) is the perfect frozen and refreshing treat to go alongside a day at the beach or any tropical vacation.
So in honor of the pineapple, rum and coconut based classic cocktail, we not only made our own boozy cake ball version, but we’re also sharing 8 of our favorite boozy piña colada desserts. Make any of these for immediate transportation to tropical paradise.
Any boozy dessert that doesn’t require turning on an oven on a hot summer day definitely deserves to make this list. You can use all rum (and no water) if you’d like to make this pineapple, coconut, whipped cream and cherry concoction extra boozy (and who wouldn’t?)
No one will know this super moist, tropical cake starts from a mix thanks to the incredibly sweet coconut cream, sweetened condensed milk and white rum filling.

Okay this pineapple and shredded coconut bar recipe doesn’t technically call for rum (it substitutes rum extract instead). But 1) these bars are so cute they couldn’t not make this list, and 2) who says you can’t delete the word “extract” altogether in your own boozy version?
