8 Boozy Piña Colada Desserts To Make Right Now

It makes complete sense that National Piña Colada Day, July 10, is smack dab in the middle of the summer- this sweet, tropical cocktail (or tropicocktail perhaps?) is the perfect frozen and refreshing treat to go alongside a day at the beach or any tropical vacation.

So in honor of the pineapple, rum and coconut based classic cocktail, we not only made our own boozy cake ball version, but we’re also sharing 8 of our favorite boozy piña colada desserts. Make any of these for immediate transportation to tropical paradise.

Boozy No Bake Pina Colada Pie

Any boozy dessert that doesn’t require turning on an oven on a hot summer day definitely deserves to make this list. You can use all rum (and no water) if you’d like to make this pineapple, coconut, whipped cream and cherry concoction extra boozy (and who wouldn’t?)

Boozy Pina Colada Poke Cake

No one will know this super moist, tropical cake starts from a mix thanks to the incredibly sweet coconut cream, sweetened condensed milk and white rum filling.

Bacardi Pina Colada Cake

Again, this starts with a cake mix, but is then elevated to a whole other moist and boozy level with coconut cream pudding, chunks of crushed pineapple and dark rum both in the cake and in the frosting.

Boozy Pina Colada Bundt Cake

The site says it perfectly: “Pineapple upside-down cake meets Piña Colada: Say hello to your new favorite drunken cake. It's the best of both worlds in one dessert.”

Boozy Pina Colada Ice Cream

The perfect tropical cool down when it’s hot enough outside to cook sidewalk eggs. Coconut ice cream gets a boozy makeover with rum, pineapple chunks, and maraschino cherries, which contradictory to what the website says, are not optional.

Boozy Pina Colada Mousse

Homemade coconut whipped cream and pineapple juice give this boozy mousse tons of flavor to the point where it almost… almost… doesn’t even need the rum.

Boozy Pina Colada Popsicle

This cream of coconut and pineapple popsicle recipe calls for a “splash” of rum. Apply that terminology as liberally as you see fit. :)

Pina Colada Bars

Okay this pineapple and shredded coconut bar recipe doesn’t technically call for rum (it substitutes rum extract instead). But 1) these bars are so cute they couldn’t not make this list, and 2) who says you can’t delete the word “extract” altogether in your own boozy version?
